Cleaning methods that introduce standing water near equipment can create problems inspectors are trained to flag — water as a contamination vector, harborage points a washdown can't drain, electrical equipment that shouldn't have gotten wet in the first place.
Dry ice blasting doesn't fix every sanitation problem, and it isn't a sanitation step at all. It's a mechanical cleaning method that removes physical soil without adding water. Here's how it fits into a real facility's cleaning program, what it does and doesn't replace, and where the boundary sits.
The boundary — we're a cleaning step, not a sanitation step
Cleaning removes physical soil; sanitation reduces microbial load. They're sequential, not interchangeable. Dry ice handles the mechanical cleaning step. Your quat, peroxide, or chlorine sanitizer still handles sanitation. We do not represent dry ice blasting as a kill step, as sanitizing, or as disinfecting, and it does not meet or satisfy USDA, FDA, SQF, BRCGS, GFSI, HACCP, or FSMA requirements on its own.
What it does do is remove soil mechanically, in some places wet methods struggle to reach, without adding a moisture problem for your sanitizer to compete with.
Where it can fit in a cleaning program
- Ovens and proofers: crown, walls, racks, and chain drives — carbon and grease removal without wetting the burner, band, or heating elements.
- Allergen changeovers: the dry-ice pass targets corners wet wipe-downs commonly miss — inside guards, the underside of conveyor returns, gaps around drive sprockets — as a mechanical step ahead of your sanitizer.
- Smokehouses and ovens with heavy buildup: creosote and protein deposits that a degreaser-based wash may need a long soak to shift.
- Packaging equipment: fillers, cappers, labelers, and case-erectors with sugar, syrup, and adhesive residue.
- Refrigeration: evaporator coils, fan motors, and condensate pans, cleaned dry.
- Around electrical and control cabinets, after lockout/tagout: cleaning that often gets deferred because no one wants to spray a panel with water.
What documentation we provide
We don't audit your facility and we don't represent our documentation as something an inspector or auditor will accept — that determination belongs to your QA team and your regulator. What we provide, for your own records: a pre-job scope sheet identifying the equipment and soil type; a photo log of each asset before and after, time-stamped with the operator name; and a completion record signed by our lead and your contact, with any deviations noted. If your team runs its own ATP or visual verification, we're glad to note the results alongside our record, but we don't set or interpret your pass/fail thresholds.
Allergen changeover, specifically
This is a common use case. A dry-ice pass in hard-to-reach corners — drive sprockets, conveyor returns, inside guard panels, underside of vibratory bowls — can be a useful mechanical step ahead of your sanitizer during a changeover. We document each corner so your QA team can re-swab the same locations on your own schedule, using your own thresholds.
Do we run during production?
Adjacent lines, sometimes, depending on layout and containment. The active line, no. We schedule into sanitation windows, weekend shutdowns, or shift changes agreed with your team, and we stage containment when there's aerosol risk to a running zone. CO₂ sublimates and displaces oxygen, so indoor work requires continuous CO₂ monitoring and ventilation regardless of room size.
What it won't do
It won't replace your sanitizer, your CIP system on closed-loop equipment, or your floor-and-drain washdown. It doesn't guarantee passing any inspection — that depends on your full SSOP and HACCP plan, which your own PCQI is responsible for. And it won't fix a cleaning-frequency problem; heavily hardened soil takes longer on the first pass regardless of method.
Limitations and safety
- Mechanical soil removal only — never described as sanitizing, disinfecting, food-safe cleaning, or audit-approved.
- Sanitizer application per your SSOP is still required on food-contact surfaces after our pass.
- Electrical and control cabinets are cleaned only after lockout/tagout performed per your site's procedure.
- CO₂ monitoring and ventilation are required for any indoor or enclosed work area.
- A substrate test patch is run first on gaskets, elastomer seals, or unfamiliar coatings.
- Dislodged soil is collected and its disposal remains your facility's responsibility per your waste protocol.
- PPE (hearing, eye, respiratory) is worn by our crew per the work environment.
